Le m\u00e9lange est alors chauff\u00e9 dans une grosse cuve en cuivre. Lino ajoute alors de la pr\u00e9sure tir\u00e9e de l\u2019estomac de veau pour lancer la fermentation. Deux hommes soul\u00e8vent la partie solide qui peut peser jusque 60\u00a0kg, \u00e0 l\u2019aide d\u2019une grande pi\u00e8ce de lin, le coupent en deux puis le d\u00e9posent dans un moule en bois ou en m\u00e9tal. On imprime alors \u00e0 la meule la marque de la fabrique et la date de fabrication et on la plonge dans de la saumure pendant\u00a03 ou 4\u00a0semaines. Le parmesan atteindra sa maturit\u00e9 apr\u00e8s deux \u00e0 trois ans d\u2019affinage.<\/p><\/blockquote><\/div><\/div><div class=\"wpb_text_column wpb_content_element \"><div class=\"wpb_wrapper\"><blockquote><p>Pendant les six premiers mois d\u2019affinage, il faut tourner les meules de 40\u00a0kg chaque semaine \u00a0Chez Lino \u00a0, les parmesan atteignent vraiment leur pl\u00e9nitude au bout de 2\u00a0ans d\u2019affinage.
